I have a pretty huge sweet tooth, actually I have several sweet teeth I believe, so it isn’t much of a surprise that I would make a dish like this…
I know it is a little late to make this for your Thanksgiving dinner dessert, but you can include it on your Christmas or New Year’s menus.
Sweet Potato Apple and Cranberry Bake
- 6 medium sweet potatoes
- 1 cup water
- 1 cup sugar
- 2 cups fresh cranberries (or frozen)
- 1 large apple, thinly sliced
- 1/2 cup light brown sugar
- 1/4 tsp cinnamon
- 1/2 cup butter
- 1/2 cup orange juice
It was absolutely delish. I could have enjoyed it with ice cream on the side and I’m not joking. The cinnamon adds a really nice spice and the orange juice gives it a little citrus flare. The apples and cranberries are a nice variation in texture and flavor. It does seem like a strange combination, especially if you are as new to sweet potatoes as I am, but trust me – this one won’t disappoint. I’m adding this to our menu from now on!
