Me and Ethel had a super lazy day. We stayed in our jammies–she doesn’t wear jammies–I stayed in my jammies all day long. We also took a lot of pictures. Here’s how our day went:

Lunch: Boca ‘chicken’ patty grilled on the George Foreman on sandwich thin with Skinny Cow chipotle cheese, and sweet potato fries with my homemade spicy dip (recipe below) |
Spicy French Fry Dip
- lil bit of vegenaise
- lil bit of siracha sauce
- cayenne pepper
- garlic powder
- teeny tiny bit of honey

Then of course, it got to be dinner time. I found this recipe claiming the noodles to be “too spicy” and laughed because there was hardly any reason for that seeing how it only had a little crushed red pepper in it…so I made it spicier. Everyone needs a little spice in their life.
- 1 package of linguine, spaghetti or angel hair pasta (I used whole wheat)
- 1/2 tsp crushed red pepper
- 1-2 tsp Chili paste (adjust to your preferred level of spiciness)
- 3/4 cup sesame oil
- 6 Tbsp honey
- 6 Tbsp less-sodium soy sauce
- 2 carrots, peeled and shredded
- 1/2 cup fresh cilantro, chopped
- 3/4 cup chopped unsalted, dry roasted peanuts
Shred the carrots, and chop the fresh cilantro and peanuts. Set aside.
Combine first three ingredients in a small pot and cook over medium heat for 2 minutes. Strain out pepper and reserve oil.
Whisk the honey and soy sauce together with the reserve oil.
Pour mixture over top of noodles and toss to coat evenly. There will be extra liquid in the bottom, but that’s okay. You don’t want them to be too dry – I prefer the noodles soaked in the stuff!
Serve warm. Top with carrots, cilantro, and peanuts.
I highly recommend this recipe. I told the Viper Pilot that I will be making this one for him next week. By the way, my spring break is next week (I’m 20 something years old and still get SBs…my goodness gracious) and I’ll be spending part of it in Texas. He will LOVE this recipe. I think I’ll try adding chicken next time. And even MORE spicy!! Oh yeah… 🙂
