I genuinely don’t know what I would do without the Viper Pilot.
He’s pretty handy to have around the house. He’s also good at killing spiders, even though sometimes he claims he “can’t see them.” Like last night, I spotted a spider on the ceiling above the bed.
Me: “Oooh no. Oh heck to the no. Kill it. Now. Then flush it.”
Him: “Where?”
Me: “THERE!” (pointing in the general direction while maintaining a safe distance — spiders may not fly but they can jump)
Him: “There’s no spider there.”
Me: “YES THERE IS! Kill it. NOW.”
Him: “I know, I’m just teasing you. I’ll get it.”
Hilar.
Laundry and dinner don’t care that my feet hurt. {Diagnosis of feet will be determined on Friday.} Even with two bum feet, the world still turns. I don’t mind making dinner, I love to cook. It’s laundry that I despise. It never ever ever ends…
Tuesday night’s dinner was quick, simple, lip-smackin’, and finger-lickin’ good. Chicken smothered in homemade BBQ sauce served with greens and classic couscous.

Sweet & Tangy Oven BBQ Chicken
adapted from Cooks Illustrated
- 1 cup ketchup
- 3 Tbsp mild molasses
- 3 Tbsp cider vinegar
- 2 Tbsp Worcestershire sauce
- 2 Tbsp Dijon mustard
- 2 Tbsp pure maple syrup
- 1 tsp chili powder
- 1/2 tsp cayenne pepper
- 4 (6- to 8- oz) boneless, skinless chicken breasts, trimmed
- salt and pepper
- 1 Tbsp vegetable oil
The broiling is the most important step because the sauce becomes lightly carmelized. Mmm-mmm. It’s the perfect texture and goes great with the chicken. It reminded me of living in Mississippi where BBQ isn’t about the meat, it’s about the sauce. That’s called Memphis-style BBQ. Even though we didn’t eat much chicken in Mississip (that’s Kansas City-style) this dish gave us the warm, cozy, southern comfort feeling in our bellies that we remember so well from our favorite BBQ joint in C-bus.
This recipe is so easy – you can have a delicious chicken dish complete with a sweet, tangy, spicy sauce without firing up the grill on those chilly weeknights.
