Hi readers! I want to wish a very happy birthday to someone very special. Alison is more than just my sister, she’s my friend. I played with her hand-me-down toys, her friends cut off all my Barbies’ hair, she told me stories, we picked on each other and pulled hair. She can read my mind, finish my sentences, laughs with me until we cry…or worse…at the stupidest little things (Christmas trees or mattresses strapped to tops of cars), and understands that vodka and wine are not optional in life. When I am mad at someone, she is mad at them too, no questions asked. She will always pick me up when I fall down…after she finishes laughing. Love you, Al!
How is your Wednesday? The week is half over! My day was the same old, same old…I went to work, snuck away to grab an afternoon pumpkin spice chai latte (Wednesdays are my happy days, I allow myself to splurge on a fancy expensive drink), came home, yoga, prepared dinner, and now I’m probably watching Downton Abbey while waiting for the Viper Pilot to get home so I can actually cook dinner.
Rinse and repeat.. 🙂

Not going to lie, I’m ready for the weekend. Since the Viper Pilot has plans with the boys and I have plans with the girls this Friday, I decided to get a jump start on next week’s meal plan now. This way I can spend the rest of the weekend with Mr. Viper Pilot instead of going to the grocery store.
Do you meal plan? I meal plan for the same reason that I set out my clothes for tomorrow before I go to bed. It’s SO easy and saves you a ton of time. Creating a delicious meal for your family on a Thursday night doesn’t have to be a headache every time. It’s a sanity saver. I take it one week at a time. Do I stick to it every.single.day? Not always. Do we still eat out occasionally? Absolutely. Each week I make a menu (with maybe one or two “eat leftovers” days) round up recipes, make a grocery list, and go shopping.

Monday: spicy chicken pesto pasta, salad
Tuesday: sweet and tangy oven BBQ chicken, prosciutto-wrapped asparagus, couscous, salad
Wednesday: LEFTOVERS! or if you’d rather save those for the weekend, chicken tortilla soup
Thursday: slow cooker cranberry pork roast, sauteed broccoli
Thai Food Friday: pad thai
