It’s eerily dark outside for this time of day. Oh, and in case you’re wondering, all the construction is a new bank they’re building more or less in our backyard. It’s really annoying – the workers take their lunch break leaning up against the chain link fence, basically in our backyard. Elle does not approve of the intruders. Since I may be possibly living here another year, I’m working on a letter to the city to make sure the privacy fence gets finished so that people don’t drive up to my sliding door looking for the ATM. However, if they’d like to make a deposit, I wouldn’t mind so much…

I would love to visit Thailand someday. Rumor has it, they love to snack. Hey, what a coinkydink! Me too! I’ve been told that hawkers set up food booths in every street market. What a wonderful way of life. Another thing I absolutely love about Thai food is the method of cooking. It is almost exclusively rapid stir-frying or steaming, both of which help to retain the nutritional value of the ingredients. Another great bonus –> veggies, veggies, veggies! Here’s an easy recipe for the most popular dish, Pad Thai, that you can make at home. Most of the ingredients you can find in the Asian food section of your grocery store, or if you’re lucky, at your local Asian food market.
perfect thai
- 8 oz thick rice-stick noodles
- 2 Tbsp vegetable or peanut oil
- 2 garlic cloves, chopped
- 2 fresh red chilies, seeded and chopped
- 6 oz pork fillet, sliced thinly (or chicken or beef)
- 4 oz uncooked shrimp, shelled and chopped
- 8 fresh Chinese chives, chopped
- 2 Tbsp fish sauce (warning: this stinks)
- juice of 1 lime
- 2 tsp jaggery or soft light brown sugar
- 2 eggs, beaten
- 4 oz cup bean sprouts (you can find these in the produce section usually)
- 4 Tbsp chopped fresh cilantro
- 4 oz cup unsalted peanuts, chopped, plus extra to serve
- crispy fried onions, to serve
