I have a test tomorrow, a project (that is mostly done) due Thursday and two finals on Monday. I probably have no business blogging with all that looming over me, but I’ve been studying my brains out all afternoon and I seriously needed a break. I was going to sit outside and read my book for a while, but it’s a scorcher out there today and I was forced back in after about 2 pages. Well, it’s almost a scorcher – it’s about 90 degrees which is plenty hot, tack on the humidity and it’s just a bit too sticky to be outside today. What really amazes me is that it’s snowing in Iowa, so the complaining stops here.
I love to snack when I study. I went lite today since we’re going to do a fab-ab workout when Alex gets home. And when you’ve got studying to do, quick and easy is essential. I had an over abundance of chickpeas in the kitchen, so I utilized my herb garden and threw this together.
I call them popcorn chickpeas. |
Popcorn Chickpeas
- 2 cups chickpeas (canned would work just fine)
- 3 Tbsp olive oil
- 1 Tbsp coarsely chopped rosemary
- 1 Tbsp minced garlic
- sea salt and cracked pepper to taste

Nahh…but seriously, 80s model Tom Cruise in a flight suit and dog fighting? Who wouldn’t love it.
