Howdy readers! How was your weekend? Did you do anything fun? Jury duty? Computer virus attack your computer? Maybe you went to a bridal shower?
I told you last week that we were going to Nashvull! But first a quick recipe I’d like to share, with fresh herbs, of course.
|tarragon and parsley|
Fettuccine fines herbes
- 1 Tbsp olive oil (or unsalted butter)
- 1/3 cup non-fat ricotta
- 1 Tbsp finely chopped chives (I omitted)
- 1 Tbsp chopped tarragon
- 2 Tbsp chopped flat-leaf parsley
- 2 Tbsp chopped chervil (or additional parsley)
- 3 Tbsp finely grated Parmigiano-Reggiano (or Parmesan)
- 3 Tbsp capers
- 1/4 tsp sea salt
- 6 oz fresh fettuccine noodles
- Splash of white wine
- freshly ground black pepper
Mix together olive oil, ricotta, herbs, Parm, capers and salt. Boil the pasta until tender but slightly firm, usually 2-4 minutes. Scoop about 1/2 cup of the cooking water from the pot, then drain the noodles. Using tongs, toss them with the ricotta, herbs and capers, along with as much as the reserved pasta water (I used a splash of white wine, too) as it takes to create a creamy sauce. Grind some black pepper on top and serve warm.
If you don’t have an herb garden, I strongly recommend you plant one, otherwise check for the fresh herbs in the produce section of your grocery store.

Anyway, on to Nashvull. It was such a fun weekend. We met up with friends from high school that I graduated with. One lives in Atlanta and the other is in Memphis so we called it the “Class of 2006 (ish) southeastern reunion.” [Alex graduated in 2005, hence the “ish.”] Check out some of the pictures!

We have been told time and time again that we MUST eat at the Loveless Cafe. Best advice ever given. It has been featured on the Food Network tons of time and Bobby Flay said their biscuits were to die for. True statement.

Our route back to C-bus took us through the down of Smithville, MS. You may have heard about it on the news – it got obliterated by a tornado last week. We got to see the damage first hand. I’ve never seen such a mess and such devastation. I cried the whole way through town just looking at all these people are suffering through. There were people everywhere cleaning up the mess and putting tarps over what is left of their homes to get ready for the next round of storms that is supposed to come through tomorrow.

so there were many homes completely wiped away with nothing
left but a concrete slab.
Well, I’d better get back to the real-world. I planned dinner for every night this week and even bought all the ingredients at the grocery store, however I completely forgot to write down which recipes I bought the food for, so I’d better start flipping through cookbooks…which always leads to bigger and better projects…
