I landed in Jackson, MS airport jet-lagged and exhausted from my European adventure. I grabbed my bags (which I was relieved to see both of them) and waited for my Prince Charming to arrive to take me home. He arrived right on time with a red rose. (surprise #1)
Alex: So maybe we’re not going home tonight. We have to be back at the airport tomorrow morning. (surprise #3)
Me: What? Why? Where are we going?
Alex: You’ll find out tomorrow.
Though I was very confused, I didn’t argue with this. Not only do I love surprises, but I was really glad we were able to get away for a while before he moves to San An. The handsome little devil had packed a separate suitcase for me so that I had clean clothes and everything I needed for our little get away. He even did a great job packing for me! (surprise #4)
Sure enough, next morning we were up early (I was up at 4 am thanks to jet-lag) and before I knew it, I was back at the airport checking in for a flight all over again. I feel like that’s all I ever do…
Any guesses where he took me?

SURPRISE #7 <–best part.
We went out to dinner at a steakhouse we had always wanted to try when we lived there but never did that evening to celebrate. After our delicious dinner, we really regretted not going there before.
They gave us a free dessert (I couldn’t keep my big mouth shut and told them our news) and we were thrilled to see Carrotcake cheesecake on the menu. Our two favorite desserts in one! I must figure out how to make this. It was sooo good.
The next morning we enjoyed our morning coffee and the breathtaking view sitting on the patio in the complimentary robes from the resort. I felt like a million bucks.
We stopped by to see a good friend of mine for lunch and then headed off to the mountains to hike our favorite, Waldo Canyon. It has some of the very best views.
