Reason #627 to love fall: Pumpkin pie.
But not just any pumpkin pie. Vegan, GF, soy-free pumpkin brownie “hybrid” pie. I’ll explain the hybrid part later.
Sounds kinda trippy, eh? I know. And generally with all those keywords in front of the word pie, one would think it might not taste so good – well, that’s wrong. This time, anyway.
So, I got this new stand mixer (which I LOVE!) and I really wanted to try it out. Needless to say, I still managed to make a horrifying mess of my kitchen, but at least I didn’t have globs of mixtures hanging from the ceiling and all over the back splash. Long story short, my old mixer and I…well, we had issues. Um, like seriously big issues.
I found this recipe for GF brownies online that I really wanted to try but since I’m a fan of pumpkin and tis the season, so I decided to make a pumpkin topping for the brownies.
This pumpkin dessert will cure your fall cravings and your sweet tooth, too – at least it did for me!
Pumpkin Brownie Hybrid Pie
Pumpkin Brownie Layer:
- 1/4 cup coconut oil, softened
- 1 cup canned pumpkin
- 1.5 tsp pure vanilla extract
- 1/2 cup + 3 Tbsp sugar
- 3/4 cup GF flour + 3/4 tsp Xanthan gum (or your choice of flour)
- 1/4 cup cocoa powder
- 1 Tbsp cornstarch
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1 cup canned pumpkin
- 1 tsp pure vanilla extract
- 3 Tbsp almond milk
- 2 Tbsp cornstarch
- 1/3 cup sugar
- 2 tsp pumpkin pie spice (or 1-1/4 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp nutmeg)
- Shaved chocolate, for garnish
For brownie layer: In a stand mixer or by hand, mix together the coconut oil, pumpkin, vanilla, and sugar until blended well. Sift in the flour, cocoa powder, cornstarch, baking soda, sea salt and mix until incorporated. Take about 2 Tbsp of the mixture and place it in muffin tin. Wet fingers and spread around evenly so it is smooth.

I love this dessert because it’s sweet and tasty and not bad for you! Minus the ice cream – if you’re lactose intolerant, try Rice Dream non-dairy ice cream. It’s so good!!
