I have so much to tell you about because a lot has happened since my last post. Yet, when I tell you that I am currently blogging while cooking 10 pounds of pasta and four loaves of garlic bread for 30 some hungry pilots, you will understand that I am just going to blog about last nights’ dinner instead. (More on the pasta and garlic bread in another post – long story short, I’m doing a spaghetti lunch for a bunch of pilots today.)
Last nights’ dinner was a healthy take on Sloppy Joes. It is a tangy recipe packed with veggies and lean ground turkey breast. I served it on sprouted whole grain buns with a big green salad on the side. Needless to say, I scoped out the Whole Foods of San Antonio and yep, I do indeed approve.
Turkey Sloppy Janes

- 1 yellow onion, chopped (I omitted – substitute celery)
- 1 green bell pepper, chopped (I omitted – substitute chiles or jalaps)
- 3 Tbsp no-salt-added tomato paste
- 1 cup grated carrot
- 1 lb ground turkey breast
- 1 (15 oz) can no-salt-added tomato sauce
- 1/2 cup chopped pitted dates (about 5 dates)
- 4 tsp balsamic vinegar
- 5 tsp yellow mustard
Served on a sprouted whole grain bun with chipotle sweet potato fries and asparagus. |

Even the Viper Pilot liked this meal!
Note: I did not make the sweet potato fries from scratch. Why bother when the folks at Alexia Natural Foods make them so well and stock them in my grocery store’s freezer section for $3? 😉
