Happy Super Bowl! Yeah…I’m one of those people who just watches it for the commercials. I’m typing this post during the game and taking breaks to watch the commercials. So far, I am not all that impressed. They need to step it up here, or they’re gonna lose me.
Did you have a lovely weekend? Mine was incredible. Friday was date night with the Viper Pilot.
Saturday, I was in a meeting all day. But later that evening I made a delicious Pasta Romano dish with wonderful friends, who I am so thankful for, which we enjoyed with red vino. We had cheesecake for dessert {much to my delight!} We wrapped up the evening by playing the “guess who” game. That’s the game where you write a famous person’s name on a note card, pass it to another person and they stick it to their forenugget without looking at what is written on it. You have to guess who you are by asking only yes or no questions. It is always entertaining. We played it on my birthday, too.
When I got home, it was kind of late, but not too late to catch up with one of my best friends. He’s one of the groomsmen in the wedding and we’ve been friends for years. He’s an AF pilot and is deploying soon. We were long over due for a 5 hour chat. It was 4 am when we finally said goodbye!! I think that is a new record.
As you can imagine, I slept in a little later than normal this morning which usually makes me Miss Grumpy Pants. But, there wasn’t much going on today, just some laundry and a trip to the grocery store, so it’s all good. NBD. My madre sent me a picture of my {ridiculous} dog, begging for a cookie. That woman spoils that dog…Elle is always begging for food like crazy when she gets back from her house. I wonder what that should tell me about my future children…

In honor of Kelly Clarkson not screwing up the lyrics to the National Anthem (thank goodness) and the BEST SUPER BOWL HALFTIME SHOW I HAVE EVER SEEN (I love Madonna!!!), I decided to throw together something special for dinner. Well, it wasn’t that special – it was just another one of those times when I looked in the cabinets, rounded up what I had, and threw it together. It turned out awesome.
Pasta is my go-to when I don’t have much food in the kitchen. Because a) I love it and b) it’s easy and c) it’s healthy and d) you can do SO much with it…e-f-g-h-i-j-k-elemenohpee-q-r-s… Yeah, you’re singing.
Zorba the Greek Pasta
adapted from my nugget
- 3 cups chicken broth
- 16 oz 100% whole grain pasta (I used angel hair but anything will do)
- 1/4 cup extra-virgin olive oil
- 1 1/2 tsp minced garlic
- 1/2 tsp dried basil
- 1/2 tsp dried thyme
- 1/4 tsp crushed red pepper
- 1 cup lightly salted soy nuts
- 1 cup pitted kalamata olives
- 12 oz crumbled goat cheese (could also use feta)
- 10 oz fresh spinach leaves, chopped
- 1 Tbsp lemon juice
There is just something so comforting about how the pasta tastes when the goat cheese is melted into it. YUM. This pasta, olive, and spinach dish is wonderfully light. I was quite pleased with how it turned out!
To mix things up a bit, you could add some grilled chicken, or use pine nuts (more expensive) instead of soy nuts. It could be served warm or cold as a side dish. In fact, I think it would make for a very refreshing summer dish, maybe made with orzo? Hmm…
