My mom never let us get the Little Debbie OCPs when I was a kid. I never understood why, because when I had them at a friends house, they were incredible and I gorged myself on an entire container of them once when I moved off to college. But then one day, I observed the nutrition label. Non-nutritious and delicious? Chemicals and stuff. Blergh. That’s no fun.
When I found this recipe, I swooned. They aren’t exactly healthy, but they aren’t full of chemicals either. All nature, homemade OCPs. I modified the original recipe after my first attempt. It called for WAY too much flour. The version I’m sharing below, is with the amount of flour I used.
The only ingredient that I didn’t have in my chicken kitchen (that just happened…) was marshmallow creme. After work, I picked up container of the stuff. It’s been years since I’ve had that gooey stuff. Why, oh why do I not bake with it more often?! The best part is, there was no one here to judge me when I took a whole spoonful of the stuff and put it directly in my mouth. Oh, shush, you would have done it too…
Oatmeal Cream Pies
adapted slightly from Baked Bree
Cookies:
- 1 stick butter, room temperature
- 3/4 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 1 1/4 cups flour
- 1 1/2 cups oats
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 stick butter, room temperature
- 1 (7-oz) container marshmallow creme
- 3 cups powdered sugar
- 1 tsp vanilla
Use an ice cream scoop to drop dough balls on a parchment-lined cookie sheet. Or, if you don’t have an ice cream scoop, make them into 1 Tbsp soon sized balls. I had to use my palm to kind of flatten them down into the shape of a cookie because they didn’t flatten themselves in the oven.
Bake in a preheated 375 degree F oven for 8 to 10 minutes. Let cool completely on a cooling rack.
Make the filling by creaming together the butter and marshmallow creme. Slowly add the powdered sugar and vanilla. Beat until smooth and fluffy. Add a generous scoop of filling to half of the cookies.
Add another cookie to the top and poof! you have an OCP.

No, no they do not. At all. They’re WAY better. Soft, chewy cookie with a ooey gooey sweet filling. YUM!! I will bring him one when I go visit him this weekend. {Happy face!!} I’ve gotten to see him a lot more than usual lately! I’m so spoiled!!
