Making this meal this weekend is not an option. You WILL be making this for dinner. At least for Cinco de Mayo, which is right around the corner. It’s super good.
I made it for the Viper Pilot and as we were sitting down and taking our first bites, I blurted out,
“I’m not trying to toot my own horn, but this is AMAZING!”
I’m telling you what’s the up and up here, you guys. This meal is wh-wh-wicked good.
I miss having someone to cook for so it was all the more enjoyable. When we I was cooking at the Viper Pilot was cleaning up the dishes along the way (we make an awesome team…nothing to clean up except the leftovers!!) we were reminiscing about how we always wind up with small kitchens, yet we still love to cook.

And — when there is daylight anyway — it is very easy/pleasant/stress-free to cook in. It would be a lot better with an island, and if we were staying in the Texas house longer, we would probably put one in. It could also use better lighting, but I really am not complaining. Just LOOK at all that counter space!! Capital why-ee-ess. Yes.
I took it to the extreme with this recipe. It was fiesta night at our Texas house and it was in-cred-ible. You know its good when your dog begs…look how pathetic Elmer looks. Poor thing…with her new do she actually does look like she is starving.
Chicken and White Bean Enchiladas
adapted from Skinny Taste
- 1 tsp olive oil
- 2 cloves garlic, minced
- 1 can (4.5 oz) chopped green chiles
- 1 can (4.5 oz) chopped jalapenos
- 1 can (15.5 oz) Navy beans
- 8 oz cooked and shredded chicken breast
- 1/3 cup water
- 1 chicken bullion cube
- 1 tsp cumin
- 1 (16 oz) jar verde enchilada sauce (or you could make your own…)
- plain Greek yogurt (or sour cream)
- 3/4 cup Mexican cheese
- 8 medium whole wheat tortillas
- chopped fresh cilantro
- 1 cup extra long grain rice (or basmati rice)
- 1/2 lime, juice of
- 2 cups water
- 1 tsp salt
- 3 Tbsp fresh chopped cilantro
- 3 tsp olive oil
Some refried black beans with jalapenos go good with tortilla chips. Make sure you savor every bite. It will have you going back for more…I’m pretty sure the Viper Pilot ate two enchiladas in one sitting…
