Lately with our dinners, I’ve been having to get creative. Not only does the Viper Pilot come home at random times, sometimes later than earlier, but the kitchen is really small and cooking isn’t exactly easy. And every pilot’s wife knows not to have dinner ready when he is “supposed” to get home or it will be over-done or too cold. So I need something that I can whip up really fast and give us time to digest before bedtime. There haven’t been any gourmet meals, per se, but we’ve had some goodies.
My secret weapon.
Pasta and Chicken
- olive oil
- 2 cans white chunk chicken
- 1 container of whole grain pasta
- 1 packet of pre-measured spices of your liking (I used Chicken Cacciatore)
- 1 can healthy request cream of mushroom soup
- 1 can healthy request cream of chicken soup
- a little splash of chicken broth
- 2 cans white chunk chicken
- 1 can diced green chiles
- 1 can red hot enchilada sauce
- 1 packet of pre-measured spices of your liking (I think I used Enchilada Casserole)
- whole grain tortillas
- shredded Mexican cheese
- olive oil
- 2-3 pork chops
- 2 apples sliced thin (I used gala)
- apple juice
- 1 packet of pre-measured spices of your liking (I used Apple Sage Pork Chops)

I may have to try those…. it's not always easy to make a "gourmet meal" with a 7 month old either (one who likes to crawl up to you and cling to your legs while trying to do dishes, laundry, cooking! LOL) 🙂

My grandma sent me a couple of those spice packets but I never did anything with them because I have a nice spice rack too. I suppose I should actually use them haha!
