We woke up yesterday to a Christmas miracle!!
On the menu: slow-roasted prime rib, Yorkshire pudding, pan-roasted asparagus. I focused less on the seasonings with this meal, and more on the natural flavor of my ingredients. The only spices used were a little sea salt and fresh ground pepper.
Food, au naturale.
I made the most delicious, albeit unattractive, cake for dessert. Vanilla-bourbon pudding cake served warm and topped with a rich bourbon butter sauce.
I desperately wish I could tell you it was healthy. {I’ll share the recipe later this week.}
The best part about a quiet Christmas at home is not having to worry about doing hair or make-up and staying in your jammies all day long.
We ended our day, still in our pj’s, vegged out on the couch. It was the laziest, most peaceful day we’ve had in a very long time. And much needed quality time spent together. Though thousands of miles separated us from our families, we are grateful that we were able to enjoy the holiday in each other’s company and use modern technology to communicate with them. To those spending this joyous season apart from the ones they hold dear in their hearts due to deployment, or for any other reason causing the void of a loved one, I’m sending you my love. Keep your chins held high, your hearts full of love, your spirits strong, and may God’s peace be with you.
We already have established some of our own traditions over the years and are still starting new ones. What are some of your favorite family traditions? We always crack open a bottle of a unique, special-occasion wine or liquor. This year, we enjoyed a glass of Port wine from Portugal that we bought at a local bazaar.
