I just finished a most excellent yoga practice and I feel amazing. The other day my friends’ Facebook status was something about her dog licking her palms during final savasana. It made me laugh because that’s something my dog would do. Well, it turns out Elle can top that. Today, she decided she would sit on me during final savasana. Apparently, she thought I needed some company in the corpse pose. 🙂
Yesterday I had only one thing on my mind: comfort food. I wanted to be cozy, comfy, warm, and happy. What comes to mind when you think of comfort food? …braised ribs…mashed potatoes…homemade macaroni and cheese…roasted chicken…grilled cheese with hot tomato soup…pot pie…oh good gravy I’m drooling. I must stop.
Who can say if roasted chicken is better than porcupine meatballs? When I think comfort food, I think chicken noodle soup. Homemade, not from a can. Winner, winner, chicken
Here’s why it wins:
-low in fat-light on the stomach-reasonable amount of carb appeal-homeyness? oh yeah, you bet it’s homey-the warming bubble (the comforting steam that totally envelops your face as you eat it)
- 1 Tbsp canola oil
- 1 lb chicken breasts, skinless, boneless, trimmed
- 1 cup carrot, sliced (about 2 medium)
- 1 cup celery, sliced (about 3 stalks)
- 1 Tbsp minced garlic
- 3 fresh thyme sprigs
- 1 fresh rosemary sprig
- 2 tsp dried parsley flakes
- 2 bay leaves
- 1 cup dry white wine
- 3 cups unsalted chicken stock
- 1 cup reduced sodium chicken broth
- 1 cup water
- 1-1/2 cup uncooked medium egg noodles
- 3/4 tsp kosher salt
- 3/4 tsp fresh ground black pepper
Bring a pot of water to a boil. Add chicken breasts and cover until cooked through and no longer pink, about 20-30 minutes.

I saw this on Pinterest today and realized that two college degrees later, being married to a fighter pilot (who also happens to be my best friend), and moving halfway around the world…this attitude really does work with any goal AND will keep you sane. These are words to live by.
…by the way, the previous pinner intended it to be about waiting until her baby was born to find out boy or girl…so it just really goes to show that it works for any situation. 😉
