In my first week of what I guess I’ll call freedom, I have been really productive. I’ve washed windows, cleaned floors, dusted, scrubbed the kitchen, baked up a storm, prepared meals, worked out, washed and folded all the laundry, and even found time to enjoy [decaf] coffee in the backyard with Elle. You might call is nesting, but I call it awesome. My house has never been so squeaky clean.
It really is starting to feel like fall. The weather is chilly and the air is crispy. I love fall for many reasons, one of them being the scent of fall. Candles are nice but there is not much that can beat the divine smell of apples and cinnamon simmering all day long. I made applesauce in the crock pot the other day.
If the tree in our backyard grew money instead of apples, we’d be filthy rich.
But alas, all we have are a bunch of apples. It’s not a bad thing in the slightest. The applesauce is wonderful and I’ll be using it to make an apple walnut bread later this week. But what can be sweeter on a chilly fall evening than warm cinnamon apples topped with a sweet golden cobbler crust? Add a dollop of vanilla frozen yogurt and you can find me in a state of apple bliss.
I’ve made this cobbler recipe twice now. The hardest part is peeling the apples, and trust me, that’s easier said than done if all you have is a vegetable peeler like I do. Whoever said peeling apples by hand was easy can kiss my freshly peeled finger…
Friends had us over for dinner last night and I brought this cobbler, hot from the oven, for dessert. Between the six of us, the entire thing was devoured in minutes. It’s really good. My favorite part is that it tastes incredible without all the butter and sugar most cobblers call for.
The recipe I followed divided the cobbler up into six ramekins, which would be great to serve at a dinner with friends or holiday meal, but I just used a 1-1/2 qt Corningware dish for conve. A pie dish would also work.
{Lightened Up} Apple Cobbler
adapted from Skinny Taste
For the filling:
- 2-1/2 lbs apples, peeled, cored and sliced 1/4″ thick (weight of peeled apples 26.5 oz)
- 1/2 cup honey
- 2 Tbsp cornstarch
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- pinch of sea salt
- 2 Tbsp fresh lemon juice
- 1/2 cup water
- 1/4 cup King Arthur white whole wheat flour
- 1/4 cup King Arthur all-purpose flour
- 2 Tbsp granulated sugar
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- pinch of sea salt
- 2 Tbsp chilled light butter, cut into small pieces
- 1/3 cup low-fat buttermilk
- 1 Tbsp canola oil
- 1 tsp light brown sugar (unpacked)
