You know it’s a long week when Wednesday feels like Friday. I hate when that happens. And even though it is Thursday, it still feels like Friday. I’ll bet you ten bucks tomorrow will feel like Tuesday. But what a relief it will be when I get home and realize that there’s only one more sleep until beach time!!
I’m not really sure why I’m blogging today, because there is nothing new to blog about. Nevertheless…
When Alex got home, we did a cardio challenge workout and enjoyed a commercialess-TV-dinner. We watched two episodes of NCIS on DVD with no annoying interruptions <– best part. We’re almost done with the first season already.
This week we have been eating up the leftovers in the fridge since we’re going to be gone all weekend, so I don’t have any new recipes for you. I did make a homemade pizza, and that was easy peasy and cheesy…and tasty, too. You can find the recipe here.

This morning I had a phenomenal breakfast. It just really hit the spot so I took a picture because I rarely share breakfasts with you.
- oatmeal
- granola
- dried apples
- dried cranberries
- unsweetened vanilla almond milk
- 1 tsp salba
- cinnamon
Monkey-wave the whole kit and kaboodle for about 30 ticks. Sprinkle 1 tsp of salba for a little extra nutrition and cinnamon on top and mmmm–mmmm. I love breakfast. Most important meal of the day, you know.
I’ve been extra busy this past week (that’s probably why the week is d-r-a-g-g-i-n-g on) since my extended abstract for my first grad school publication is due June 1. I ran into some issues with my research results and didn’t think I was going to get it finished in time. Thanks to a few Hail Marys and a few extra hours at the HPC^2, I think I might make the deadline after all. Whew.
Oh, this arrived in my mail container today…all the way from the United Kingdom. It’s an acceptance letter to the University of Surrey. Heck yes. Watch out, Princess Kate. Emily’s coming to England.
I’m waiting for all the details to fall into place before I blog about my trip to England. When I finally get all my ducks in a row and write the post, it will be a doozie. I’m so excited!
Here’s a conflict I’m in. I’m reading two books at the same time. I’m about done with The Sandbox and I just started listening to The Help on audio during my 30 minutes commute to and from work. They are both great books! However, when Alex and I take road trips, we like to listen to books on tape. We just finished one, so we’re going to start a new on when we cranium out on Saturday. That puts me at THREE books at one time. I’m hoping to finish The Sandbox before we leave so I can start a juicy new one while I bask in the sun on the beach.
- The Sandbox, read my preliminary review from when I had just started reading it here
- Word of caution, it is a tad bit vulgar. Lots of naughty words and a little inappropriate at times, but overall a very good book. I highly recommend.
- The Help, I’ll review this when I’m finished. I’m on chapter 5 and I absolutely LOVE this book. Since I only listen to it in the car, I actually find myself sitting in the parking lot at work because I’m not ready to
put it downturn it off.
