How are you? Having a good day? I hope it is as wonderful as mine! I’m having a wonderful birthday – I’ve gotten many well wishes from friends and family that I am so blessed to have in my life! AND, more importantly, the Pilot had his first flight in the Viper today. He’s a pretty big deal. I’m so proud of him and I am just sure he had a blast. I certainly hope he enjoyed it because it’s kind of his job for a while…
My sister Alison emailed me this recipe the other day and I knew the minute I saw it that it was going to be blogworthy. I’m taking it to a meeting tomorrow to share with friends for my birthday. But, seeing how today is my birthday and since it was a new recipe, I decided it would be okay to have just one little bite to make sure it was acceptable. It it most certainly Emily-approved.

Caramel Apple Cheesecake Bars
- 2 cups flour
- 1/2 cup brown sugar
- 1 cup butter, softened (I only used 1/2 cup)
- 3 (8 oz packages) cream cheese, softened
- 3/4 cup + 2 Tbsp sugar, divided
- 3 large eggs
- 1-1/2 tsp pure vanilla extract
- 1/2 cup caramel topping
- 3 Granny Smith apples, peeled, cored and finely chopped
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- 1 cup brown sugar
- 1 cup flour
- 1/2 cup quick cooking oats
- 1/2 cup butter, softened (I used 1/4 cup)
In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender until mixture is crumbly. Press evenly into a 9×13 inch baking pan lined with heavy duty aluminum foil. Bake 15 minutes or until lightly browned.
In a large bowl, beat cream cheese with 3/4 cup sugar in an electric mixer at medium speed until smooth. Add eggs, one at a time, and vanilla. Stir to combine. Pour over warm crust.
In a small bowl, stir together apples, remaining 2 Tbsp sugar, cinnamon and nutmeg. Spoon evenly over cream cheese mixture.
Bake for 40-45 minutes or until filling is set. Drizzle with caramel topping and let cool.
